Oven fried parmesan chicken
Easy, tasty and will fulfill your urge for old-fashioned fried chicken. Cut recipe
in half to prepare less. This chicken is good the next day on a sandwich.
Makes 10 servings
Ingredients
3/4 cup nonfat plain yogurt 1/4 cup lemon juice
1 1/2 tablespoons Dijon mustard
3 cloves garlic, minced
1/2 teaspoon dried oregano leaves
10 boneless, skinless chicken breasts
2 tablespoons margarine or butter, melted
Directions
- Combine all ingredients except butter. Marinate, covered, 2 hours or overnight in
refrigerator.
- Preheat oven to 350°F. Drain chicken, coat with bread crumb coating (recipe follows).
Place on baking sheet coated with nonstick cooking spray and chill 1 hour (if time
permits).
- Drizzle chicken with butter. Bake 45 minutes to 1 hour or until tender and golden
brown.
Bread crumb coating
Ingredients
2 cups dry bread crumbs or Italian bread crumbs
1/4 cup grated Parmesan cheese
Directions
- Combine all coating ingredients in shallow bowl.
